Vegetarian Butternut Squash Chili

Ingredients:
1 tbsp olive oil
1 medium onion, diced
I pepper, diced
4 cloves of garlic, finely diced
3 rib celery, diced
2 jalapenos, ribs removed and finely diced
1 green pepper, diced
½ medium sized butternut squash, peeled and diced
1 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
1 tsp salt
¼ tsp cinnamon
1 14.5oz can of fire roasted diced tomatoes
1 can tri-bean mixed beans
Optional toppings: shredded cheddar cheese, sour cream, finely diced jalapenos (ribs removed), and diced green onions
Instructions:
This one is super easy – place all ingredients in in a medium sized pot or Dutch oven.
Simmer for 1.5 hours
Top with any of the optional toppings.
