Vegetarian Butternut Squash Chili

Ingredients:

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • I pepper, diced

  • 4 cloves of garlic, finely diced

  • 3 rib celery, diced

  • 2 jalapenos, ribs removed and finely diced

  • 1 green pepper, diced

  • ½ medium sized butternut squash, peeled and diced

  • 1 tbsp chili powder

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • 1 tsp salt

  • ¼ tsp cinnamon

  • 1 14.5oz can of fire roasted diced tomatoes

  • 1 can tri-bean mixed beans

  • Optional toppings: shredded cheddar cheese, sour cream, finely diced jalapenos (ribs removed), and diced green onions


Instructions:

  1. This one is super easy – place all ingredients in in a medium sized pot or Dutch oven.

  2. Simmer for 1.5 hours

  3. Top with any of the optional toppings.

  4. Enjoy!
